How much chicken wings can a person eat? Can anyone tell me? It is one food that make you lose count. Before you realize it, there's a pile of bones in front of you already. Blame it on the high skin to meat ratio. If anyone asks for extra skin, give them chicken wings.
This chicken wings will not only make you lose count, it may make you forget your name. Buffalo wings are usually fried then shaken with some sauce to coat. I have taken a detour from that classic recipe by baking them, coating with a spicy chilli and garlic sugar glaze then baking again to caramelize. It's like wings with a spicy caramel coating. Make it one of your fun nibbles next time you are entertaining.
1 kg. of chicken wings
3 tsps. salt
1/4 tsp. ground black pepper
1 tbsp. oil
3 tbsps. corn flour
1 1/2 tsps. crushed garlic
1 tsp. of chilli flakes (more if you like it hotter)
3 tbsps. brown sugar
1 1/2 tsps. paprika
1 tbsp. balsamic vinegar
Cut the tips off the chicken wings. Cut each wing into two on the joint. Put a slash on each side of each piece. This will make the seasonings penetrate into the meat.
Season the wing pieces with 2 tsps. of salt and the ground black pepper. Add the oil and corn flour and mix very well.
Line a baking sheet with a non stick liner. Arrange the wings on a single layer and bake in a preheated oven (350° F/ 180° C) for 40 minutes turning at half time.
While the wings are in the oven, mix the garlic, chilli flakes, paprika, vinegar, brown sugar and the last tsp. of salt in a mixing bowl. When the wings are done, put them in this bowl and mix very well until all the chicken pieces are well coated with the mixture. Put them back in the baking tray and return to the oven. Cook for a further 5 minutes just to caramelize the glaze. Serve hot.
