SPICED POPPED BEANS













We all love food that pop: popcorn, pop rocks, soda pop to name a few. They are fun food that taste good but unfortunately do not have much in nutritional value. If you want something different that pops, tastes good and has so much benefits for your body, pop some kidney beans. We all know that beans are rich in protein, calcium and fiber among other good things. It is good to know that we're not noshing on empty calories when we choose beans. 

I first had a taste of these beans in a Chinese restaurant. Although red beans figure a lot in Chinese cooking it is the different sort of red beans, the azuki beans, that are commonly used. The whole dish shouts Mexican to me. Unfortunately, they were deep fried, then stir fried with spices. Nevertheless, I found them irresistible. 


I have baked mine so that it is less oily. It turned out well and and became a bit different than the original because they popped. The skin of the beans firmed up but the beans remained creamy. The sprinkle of spices at the ends perks up the subtle taste of the beans. You can vary the spices mixed in with the corn flour. Cajun, barbecue or cumin would be great with it, too. Perfect with drinks.

Ingredients:


2-400 gm. tins of red kidney beans
1 1/2 tsp. salt
2 tsps. garlic powder
1 tsp. ground black pepper
3 tbsps. corn flour
3 tbsps. cooking oil
1 tbsp. olive oil
2 tbsps. chopped onions
1 tbsp. chopped red and green chilli
1 tsp. chopped coriander leaves
1 tsp. sugar


Pre-heat the oven to 350° F/ 180° C. 


Drain the beans and wash several times until the water goes clear. Shake off the excess water from the beans. Mix the salt, garlic powder, pepper and corn flour in a mixing bowl. Add the drained beans and toss to coat. 




Add the 3 tbsps. of cooking oil and toss again. Transfer to a lined baking sheet and bake for 15 to 20 minutes or just until the beans pop. Don't bake for too long or the skins will become tough.




Transfer the beans to a pan. Add the chopped chillies, onions and olive oil. Toss for 2 minutes on high heat until fragrant. Take off the heat, transfer to a serving bowl. Add the sugar and coriander and toss. Serve with your favourite drinks.

CRISPY PATA (CRISPY FRIED PORK SHANK)



The love for pork is universal. How many countries revel on pork and munch on crispy pork skin like popcorn?


Pork is the most preferred meat of the Filipinos. The number one pork dish is the whole roast pig called lechon_yes, speared in a bamboo stick, spit-roasted whole from the snout to the tail. Fantastic! Next favourite is roasted or fried pig parts.


Crispy pata is a firm favourite in restaurants and beer gardens (Filipino equivalent of pubs). If pork rind is the favourite munchies in pubs and bars, crispy pata is the equivalent in beer gardens. Similar but more: crispy pork skin from the pork shank with the pork shank still attached to it. You've got the scratchings plus the fried meat plus the gelatinous sinew and tendons. Doesn't that sound so much better?


This is one of the best things Andrew Zimmern has ever eaten. As told by the man himself, it is  the best messy food he's ever eaten. Actually it is not supposed to be eaten in a messy way. Andrew, perhaps overcome by excitement, picked up the whole shank and munched on it like a turkey drumstick. It is actually meant to be chopped before serving.


The pork shank is simmered with seasonings until transformed to a wobbly gelatinous mass, then deep fried. It is actually a very simple operation that even a deep frying klutz like me can manage to do it without mishap. The secret is drying and freezing the joint so it doesn't spatter in the oil. You'll end up with crispier skin, too.




Ingredients:


1 pork hock, cut at the joint
1 onion, sliced
2" x 2" knob of ginger, sliced
2 cloves of garlic, smashed
1 tsp. whole peppercorns
1 bay leaf
3 tbsps. salt


Method:


Clean the pork well. Cut horizontal slashes on both sides. Put in a pot and cover with water. Bring to a boil. Skim off the scum that rises to the surface as it comes to a boil.


Add the onions, ginger, garlic, peppercorns, bay leaf and salt and boil until tender, about 2 to 2 1/2 hours. You can use a pressure cooker and it will take 30 minutes. The pork, including the skin has to be tender but not falling apart. Lay on a rack to dry. 


Transfer to a tray lined with baking paper and open freeze overnight. 


Heat enough oil for deep frying. When hot, carefully immerse the pork and deep fry, covered, on medium heat for 20 minutes. The skin should firm up and turn a medium brown. Leave to cool completely. 


Heat the oil again. Deep fry  the pork, this time on high heat for about 10 minutes or until the rind is crispy. This method doesn't cause so much spattering but have the lid on at all times to be on the safe side.


Allow to rest for about 15 minutes before chopping. Serve with the soy and vinegar dip.


Soy and vinegar dip:

2 tbsps. of brown sugar
1 1/2 tbsps. light soy sauce
1 tsp. dark soy sauce
1/2 c. vinegar
1/2 tsp. sesame oil
1/2 red finger chilli in diagonal slices 
2 shallots or half a red onion, chopped
1 garlic clove crushed
1 tbsp. of shredded fresh ginger

Mix all of the ingredients together and serve as dip for the crispy pata.

BUCO PANDAN CREPES


Tomorrow is Shrove Tuesday or better known to kids as Pancake Day. It is the day before Ash Wednesday which signifies the beginning of Lent when the use of eggs, flour, fat and milk are traditionally limited as a form of fasting and sacrifice. To use up the supplies, they are made into pancakes. In some parts of England, pancake races are held where the participants race to the finish line while tossing a pancake in a pan.

LECHON MANOK (FILIPINO ROAST CHICKEN)


It is once again time to cook with my Filipino fellow foodies at the Kulinarya Cooking Club. Our hosts for this month, Abigail of My Nappy Tales and Marni of Kensington Kitchen chose a lovely theme for the month of February. The task is to cook a dish that reminds one of one's first love.


I seem to be too old to remember the first real love. So I just had to think long and hard but can only think of one, just the one. It just has to be my husband. I'm not saying this because he reads the blog but because it is the feeling that I remember well. 


My husband is not a Filipino but a pure Chinese from Malaysia. When he first visited the Philippines, he immediately fell in love with the cuisine. Among his favourites were crispy pata (crisp fried pork shank), bulalo (bone marrow soup), kari-kari (a stew with peanut gravy), grilled pork, clam soup, everything with ube (purple yam), mangoes, the list goes on and on. One dish, though, stands out. It is lechon manok. This is the poultry counterpart of roast pig. Lechon manok is Filipino rotisserie chicken cooked in an outdoor pit. As with all of our food, it is well seasoned and very tasty. Every time we visit home, there is a lechon manok on the dining table to welcome him.



Although cooked on a spit, lechon manok is so unlike rotisserie chicken. It has an aroma and taste that it quintessentially Filipino. I haven't yet come across a recipe that gives out the secret of the famous Andok's (a famous chain) lechon manok but this is my way of cooking it. What I'm going for is a very fragrant and extremely tasty chicken that is evocative of warm climes and rural settings. 


My method of cooking lechon manok is nothing like the usual way it is cooked. After seasoning the chicken, I wrap it in banana leaves and kitchen foil before roasting. The cavity is also stuffed with garlic, ginger and pandan leaves. This results to a highly scented, flavourful and succulent chicken. Instead of the usual liver sauce that it is usually served with I opted for a fresher, zestier sauce using his favourite fruit: mango. I hope people get to like this recipe because my husband wishes to open up a lechon manok chain in the future.



Ingredients for the roast chicken:


1 whole chicken
2 tbsps. light soy sauce
1 tsp. salt
1 tsp. garlic powder
1 tsp. turmeric
1 tbsp. lime juice
1 tbsp. cooking oil
2 garlic cloves, smashed
a few slices of ginger
3 pandan leaves, knotted
banana leaves
aluminum foil


Mix the soy sauce, salt, garlic powder, turmeric and lime juice. Rub the mixture all over the chicken, including the cavity. Stuff the cavity with the garlic, ginger slices and pandan leaves. Leave to marinade for 30 minutes. 


Preheat the oven to 400° F / 200° C. Lay the banana leaves on top of a big sheet of aluminum foil. Lay the chicken on top of the banana leaves, rub with the 1 tbsp. of oil and wrap with the leaves then wrap tightly with the sheet of aluminum foil. Lay the wrapped chicken on a baking rack in a roasting tin. Add water to the tin so that the drippings don't burn.


Bake for 30 minutes. Lower the oven temperature to 350° F/ 180° C. 


Open the chicken parcel. Cook for a further 50-60 minutes, turning at half time to brown the other side of the chicken. Brush with the drippings occasionally.


The chicken can also be cooked in a lidded barbecue instead of the oven for the last hour. Use a grilling tray so the chicken doesn't stick to the grilles.


Let rest before chopping into serving pieces.



Ingredients for the mango-lime chilli sauce:


1 1/4 c. pure mango juice
juice and grated rind of 1 lime
5 tsps. white sugar
2 tsps. corn flour
1 tbsp. water
3 cloves of garlic, chopped
1/2 red fingr chilli, chopped
1 tsp. grated fresh ginger
4 tsps. fish sauce


Put the mango and lime juice and the sugar in a saucepan and bring to a boil. Stir until the sugar melts. Disperse the corn flour in the water and add to the mixture in the saucepan to thicken. Leave to simmer for 2 minutes. Add the rest of the ingredients, stir and bring back to a boil. Take off the heat and transfer to a jug or gravy boat to stop it cooking further. Serve with the chicken.

SIOPAO (CHAR SIU PAO)





When I was growing up in the Philippines, siopao was one of my favourite food. It is a steamed bun with meat filling. My favourite was the siopao with asado pork filling. The pork was cooked asado style, with soy sauce among other things. The siopao from an old restaurant called Ma Mon Luk was a legend. It is different from the rest in taste and texture. It was huge but, as was the tradition, was always eaten with a bowl of noodle soup or siomai (dumplings) soup. I know it's crazy but that's how it is done.

MELTING RED VELVET HEART CHEESECAKE CUPS


It's Valentine's Day once again and hearts are a-flutter_in the shops. Like Christmas, it is one of the most commercialized red letter days on the calendar.


Valentine's Day is not just for those wooed and cooed at but for everyone with a heart. We have every reason to celebrate the day with our loved ones, just to remember how we are lucky to have them around. 



A simple but enjoyable meal followed by a sweet dessert will warm everyone's heart. This dessert, inspired by the red velvet cake, will melt everyone's heart. Yes, even cold hearts can melt with this one. It is a mini soft set cheesecake in a cup with a melting red velvet heart center. It is a breeze to make so will have you pleased, too.


This recipe makes 12 cheesecake cups. Ramekins or muffin cups can also be used instead of the glass cups. 


Ingredients for the crumb crust:


1 c. digestive biscuit or graham cracker crumbs
5 tsps. light brown sugar
2 tbsp. melted butter


Mix everything together. Put 1 1/2 tablespoons of the mixture in each cup. Press lightly so it doesn't set solid. It has to remain crumbly so it can be scooped up easily with a spoon. 


Ingredients for the red velvet heart:

1/2 c. milk
2 tbsps. condensed milk
50 gms. white chocolate, chopped
1 tsp. cocoa powder
1 tbsp. melted butter
1 1/2 tsp. red food colouring

Warm up the milk in the microwave for 30-40 seconds. Mix with all of the ingredients and blend with a hand blender. Pour into greased moulds. I used a heart shaped ice mould (from Ikea) that takes in 1 tbsp. of mixture in each. You can use any shape you like. Freeze until firm (a few hours).


Unmold the hearts onto lined baking tray and re-freeze until ready to use.


Ingredients for the cheesecake:


1 c. cream cheese
300 mls. whipping cream
1/2 c. white sugar


Whisk the cream and sugar together until light and fluffy. Add the cream cheese and whisk again until combined. Spoon into a piping bag. Pipe into the crumb base lined cups. Level the tops with a spatula. Press a frozen heart in the center, making sure that it is fully set in so that it doesn't flow out of the heart shaped indentation when melted. The heart melts in a few minutes. It is then ready to serve.

PEANUT BUTTER MOCHI


East meets east meets west in this recipe. This recipe was inspired by a Chinese mochi but uses a Japanese mochi recipe and is filled by a favourite American ingredient. I am pleased to tell you that the mochi cooks in 8-10 minutes in the microwave and the filling is ready as soon as you're done stirring it.

MOZZARELLA AND CHEDDAR STICKS


My teenage daughter went out to our local TGI Friday with two friends and came back with a big doggie bag. The three skinny girls apparently ordered a platter of appetizers which, of course, they couldn't finish. They probably got tired of eating halfway through. She was pleased to tell us that she's brought us some food and we can have all of them except for the mozzarella stick (just one left). No problem, we'd more than gladly save that for her. Cold mozzarella sticks are not that appealing.

Since she liked it so much, I made some for her.  The one I made is an anti-processed food version. It is made of fresh mozzarella and mature cheddar and crusted with panko crumbs. It is the sort of food that us loving Mums give their children. I've made a simple sweet fresh tomato and balsamic vinegar dip that really went well with the cheese and cut back the richness of the crumbs. It is so easy to make that it can be quickly made upon request.

The verdict? Thumbs up, not just from her but also from my cheese hating but crumb loving son who found it so tempting that he just had to try it. Lucky that I've made enough.






Ingredients:

250 gms. of fresh mozzarella, roughly shredded
1 cup of grated mature cheddar 
1 tsp. garlic powder
1 tbsp. chopped parsley
1/2 tsp. garlic powder
1/2 tsp. celery salt
1/4 tsp. of ground black pepper
3 eggs
plain flour
panko bread crumbs

Method:

Beat one egg in a mixing bowl and add the parsley, garlic, powder, celery salt and black pepper. Mix well. 

Add the mozzarella and cheddar cheese and mix again. Shape into fat sticks approximately 3" long and 3/4" in diameter. It doesn't need to be a perfect shape at this point. It is easier to shape when already crumbed. 

Dredge in flour and shake off the excess. Beat the eggs. Dip the sticks in the eggs and roll in the breadcrumbs. Dip in the egg again and give it a final roll in breadcrumbs. 

Arrange on a tray and freeze for half an hour. 

Heat up a frying pan with enough oil for shallow frying. The oil should be medium hot. Fry for just a few minutes until the crust is golden brown and the sticks are puffed. By then the filling will be cooked and melted. Don't cook for too long or the cheese will ooze out. 

This will make 12 sticks. Serve with the sweet tomato and balsamic dip.


This can also be frozen up to a month. Cook from frozen.

Sweet tomato and balsamic dip:

1 big, fresh, ripe tomato
1 tbsp. of extra virgin olive oil
1 tbsp. balsamic vinegar
2 tbsps. sugar
1/2 tsp. salt
ground black pepper

Cut the tomato in half and grate the flesh. Discard the skin. Mix with the rest of the ingredients and serve with the mozzarella and cheddar sticks.
