FETA CHEESE DRESSING


We all need a fresh spark on our usual menu from time to time. Sometimes a little change in the details is all it takes. Before you grab the jar of mayo yet again to slather on something, imagine how much more flavour a simple dressing like this would give to your food.


Feta is cheese made from sheep or goat's milk. It originates from Greece but is widely used in the Mediterranean countries. Its salty, tangy flavour and crumbly texture makes it perfect for appetizers and salads. 

A little feta goes along way. I mashed a bit of feta and made it into a creamy dressing. It is perfect with burgers, barbecued meat, kebabs, wraps or baked potatoes. It will do a lot of good spooned on a simple, fresh mixed salad. Or why not just simply dip pita crisps or tortilla chips in it? Once tried, you'll want it on everything.



Ingredients:

50 gms. feta cheese, drained
1/4 c. greek yoghurt (I used non-fat)
1 garlic clove, crushed
1 tbsp. lemon juice
1 tbsp. honey
1/2 tsp. salt
1 tbsp. olive oil
1 tbsp. chopped chives

Instructions:

Mash the feta cheese into coarse crumbs using a fork. 



Add in the rest of the ingredients and mix until blended.
